Breakfast never looked so good! Try these vegan banana & cinnamon waffles. The banana acts as a replacement for egg in a traditional waffle batter and adds natural sweetness to the waffles.
Vegan Banana & Cinnamon Waffles
- 65g ripe banana
- 120ml almond milk
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 1/2 tsp vanilla paste or extract
- 100g buckwheat flour
- 3/4 tsp baking powder
- 1/2 - 1 tsp ground cinnamon
Turn on your waffle maker so that it can be coming up to temperature while you make the waffle batter.
Blend together the banana, almond milk, maple syrup, olive oil and vanilla until smooth and creamy.
In a bowl, mix together the flour and baking powder.
Pour over the sweet banana milk and mix until you have a smooth batter.
Cook according to the instructions on your waffle maker. We sprayed the waffle maker with coconut oil and cooked for 7 minutes.
Plate up and serve with your favourite toppings such as sliced banana, pecans, blueberries and maple syrup.
