Upside Down Pear And Toffee Vodka Cake

A twist on the traditional pear upside down cake! I have used Kin’s toffee vodka in both the glaze and the cake batter, which added some delicious flavour. This cake was so moist and a delicious treat for the Christmas celebrations. Serve with some of Kin’s toffee vodka to make it extra special!

Prep Time


  1. Begin by preheating the oven to 180C degrees.

  2. Prepare the glaze by mixing the 4 ingredients in a cup and pour the mixture at the bottom of a greased cake tin. Add thin slices of pear over the glaze mixture (pear with no skin or seeds) set aside while you prepare the cake batter.

  3. Using a large mixing bowl sieve the flour along with the cinnamon, nutmeg, sugar and baking powder, mix to combine the dry ingredients together.

  4. Using the cup of your Ninja Blender, pour in the eggs, coconut milk, toffee vodka and coconut oil and blend to thoroughly combine the wet ingredients together.

  5. Pour over the dry ingredients and gently stir to combine the dry and wet ingredients together.

  6. Pour the batter over the glaze and place in the oven to bake for 40 minutes at 180C degrees and bake for a further 10 minutes at 160C degrees.
