Tart with frangipane filling and nectarines

A mouth-watering tart filled with frangipane and nectarines, perfect to serve on a cold winter evening to remind you of the flavours of summer!

  • 200g butter
  • 2 1/2 cups flour
  • Pinch of salt
  • 2 tbsp icing sugar
  • 1 egg yolk
  • 2 tbsp ice cold water
  • For frangipane filling
  • 200g almond flour
  • 3 tbsp icing sugar
  • 2 eggs
  • Pinch of salt
  • 1/2 cup flour
  • 100g soft butter
  • 2 tbsp mascarpone cheese or double cream
  • Zest from one lemon
  • 1 egg for egg wash
  • Almond flakes for decoration
  • 2-3 sliced nectarines
Prep Time


  1. Using a food processor with dough blade, mix the flour with sugar and salt. Slowly start adding cold butter and pulse for 30 seconds

  2. Add the eggs and mix well. If the dough is too dry (and doesn’t stick together) then add a small amount of cold water

  3. Shape the dough to form a disk shape and refrigerate for 1 hour

  4. In the meantime. Using the food processor, add all the ingredients for the frangipane filling

  5. Take the dough from the fridge. Using a rolling pin, roll out the dough to be 1.5cm thick

  6. Place the frangipane filling in the middle of the dough, leaving about 2-3cm dough around the edge, and add sliced nectarines. Fold the sides of the dough on top of the frangipane

  7. Cover with an egg wash and almond flakes

  8. Bake in preheated oven in 180 degrees for 45min-1hour or until the crust is golden brown
