Sweet Potato Peanut Butter Muffins

You’ve heard of sweet potato brownies, now say hello to sweet potato muffins! These free from muffins are super light, fluffy and gorgeous. The sweet potato adds an amazing texture and wealth of nutritional goodness, and the peanut butter adds the most incredible flavour. These muffins are perfect for a mid-week breakfast or a tasty afternoon snack when you need a little bit of energy and something to satisfy those sweet cravings.

Sweet Potato Peanut Butter Muffins

  • 280g sweet potato (pooled and chopped)
  • 90g oats
  • 100g gluten free flour
  • 4 tbsp peanut butter
  • 1 tbsp coconut oil
  • 5 tbsp maple syrup
  • 120ml almond milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Small handful chopped peanuts for the top of the muffins
  • Pinch of salt
Prep Time


  1. Bring a saucepan of water to the boil and add the cubed sweet potato. Cook for around 12 minutes or until soft. Allow to cool

  2. Pre-heat the oven to 180 degrees celsius

  3. Add the oats to your food processor bowl and blend until a flour forms. Put to one side

  4. Add the steamed sweet potato to your food processer bowl and blitz until smooth

  5. Add the peanut butter, coconut oil and maple syrup to the food processor bowl and blend again

  6. In a mixing bowl combine together the oat flour, gluten free flour, baking powder, salt & vanilla extract

  7. Mix in the wet ingredients from the food processor then gradually stir in the almond milk

  8. Pour this mixture into a muffin/cupcake baking tray. Top with the peanuts

  9. Put the baking tray in to the oven and bake for 20 minutes. Allow to cool, serve and enjoy!
