Sweet Cinnamon Buckwheat Pancakes

A delicious breakfast treat, these pancakes are made with buckwheat to make them perfect for those requiring a gluten-free diet or just looking for a healthy alternative. You can top them with your favourite fruit to give you the best start to a morning

Sweet Cinnamon Buckwheat Pancakes

  • 2 ripe bananas
  • 180g buckwheat flour
  • 3 whole eggs
  • 1 tsp baking powder
  • Pinch of ground cinnamon
  • 1 tsp runny honey
  • 100ml non dairy milk
  • Pinch of pink salt
  • Coconut oil for cooking
  • Fresh fruit to top
Prep Time


  1. Pop all of the ingredients into your Ninja blender and blitz everything up to create your pancake batter

  2. Heat a little coconut in a frying pan over a medium heat and once the pan is nice and hot, pour a little of the batter into the pan

  3. Cook until bubbles start to appear on the surface, then flip over and cook on the other side

  4. Repeat this process until all of the mixture is used up. Then, stack up your pancakes and decorate with some fresh fruit and other toppings of choice
