Summer Berry Crumble Loaf

The perfect summer bake – especially to take wrapped up on a picnic – combining a delicious healthy loaf, a sweet homemade jam and crunchy crumble topping. Also vegan, gluten-free, dairy-free and with no refined sugar, this makes for a wonderful treat in the sun.

  • For the Base
  • 100g oat flour
  • 100g brown rice flour
  • 75g coconut sugar
  • 1tsp cinnamon
  • 1tsp baking powder
  • 240ml almond or oat milk
  • 1 tsp apple cider or white wine vinegar
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • For the Jam
  • 200g fresh or frozen berries
  • 3 tbsp stevia
  • 4 tbsp chia seeds
  • For the Crumble Topping
  • 75g rolled oats
  • 25g flaked almonds
  • 1 tbsp coconut sugar
  • 2 tbsp solid coconut oil
  • 2 tbsp maple syrup
Prep Time


  1. Start by making the berry jam: Place the berries in a pan with 2 tablespoons of water, bring to the boil and simmer for 5-8 minutes until softened. Remove from the heat, stir in the stevia and chia seeds, mix well then set aside for 15 minutes.

  2. Preheat the oven to 180 degrees C and grease a loaf tin.

  3. Make the base by adding the flours, coconut sugar, cinnamon and baking powder to your Ninja Kitchen Nutri Ninja.

  4. Whisk together the milk and vinegar and set aside for 10 minutes.

  5. Pour this into the blender with the coconut oil, maple syrup and vanilla and blend on the low setting for 30 seconds. Scrape out the mixture and spread this into the base of the tin evenly. Spoon over the berry jam in one even layer.

  6. Place the oats, flaked almonds and coconut sugar in a small bowl then rub in the coconut oil to form a crumble. Then stir in the maple syrup to create a sticky mixture.

  7. Scatter this on top to cover, then bake for 35-40 minutes until golden, risen and firmed up. Leave to cool in the tin, pop out, slice and serve!
