Ingredients

  • 2 whole eggs
  • 200ml cashew milk
  • 1/2 banana
  • 1 egg white
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • Coconut oil for cooking
  • 4 slices of sourdough bread
  • Toppings of choice - sliced banana, fresh berries and coconut yoghurt work really well here
  • Maple syrup for drizzling

Instructions

  1. To make the French toast mixture, in your Ninja blender, combine the eggs, cashew milk, banana and spices and blend until smooth and creamy

  2. Heat a frying pan over medium heat and add a tsp of coconut oil and allow to melt

  3. Soak the slices of bread in the sweet egg mixture, then place these into the pan

  4. Cook until golden on one side, then carefully flip and repeat this for the other side

  5. Once all of your French toast slices are ready, serve garnished with your favourite fruit and a drizzle of maple syrup for some added sweetness!
