Simple Vanilla Waffles (Vegan & Gluten Free)

Warm waffles on a Sunday morning topped with fresh fruit – the absolute best breakfast. These waffles are all natural yet they’re so indulgent, perfectly sweet and lusciously delicious. The simple vanilla flavouring means you can top the waffles with anything you fancy – fresh fruit, banana, chocolate chips, peanut butter, jam, the options are endless!

  • (makes 2 large or 4 smaller waffles)
  • 100g buckwheat flour
  • 30g oats
  • 2 tbsp flaxseed mixed with 8 tbsp water
  • 100ml almond milk
  • 1 tbsp coconut oil (plus extra for greasing)
  • 1/2 banana
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract
Prep Time


  1. Make sure your waffle maker is heating up.

  2. Combine the flaxseed with the water and leave to thicken up.

  3. Add the oats to your Ninja Kitchen blender and blitz into a flour. Add the oat flour to a mixing bowl along with the buckwheat flour.

  4. Add the coconut oil, banana and coconut sugar to the blender and cream together. Then add the almond milk and blend again.

  5. Pour the liquid mixture into the mixing bowl with the flour and mix well.

  6. Stir in the now thickened flaxseed mixture and vanilla extract.

  7. Grease the plates on the waffle maker with coconut oil to ensure no sticking.

  8. Carefully pour 1/2 the batter into the waffle maker for a large waffle or 1/4 the mixture for a smaller waffle. Make sure the mixture is spread out evenly then close the waffle maker and cook for 4 minutes (waffle maker cooking times do vary, so check instructions for your appliance first!).

  9. Once the waffle has cooked, carefully place it onto a plate and cover with foil to keep warm.

  10. Repeat these last few steps until you’ve used up all the waffle batter!

  11. Top with whatever ingredients you fancy and enjoy!
