Warm wafﬂes on a Sunday morning topped with fresh fruit – the absolute best breakfast. These wafﬂes are all natural yet they’re so indulgent, perfectly sweet and lusciously delicious. The simple vanilla flavouring means you can top the wafﬂes with anything you fancy – fresh fruit, banana, chocolate chips, peanut butter, jam, the options are endless!
Simple Vanilla Wafﬂes (Vegan & Gluten Free)
Or why not try stirring some fresh blueberries or chocolate chips into the mixture for added goodness?
- (makes 2 large or 4 smaller wafﬂes)
- 100g buckwheat flour
- 30g oats
- 2 tbsp ﬂaxseed mixed with 8 tbsp water
- 100ml almond milk
- 1 tbsp coconut oil (plus extra for greasing)
- 1/2 banana
- 2 tbsp coconut sugar
- 1 tsp vanilla extract
Make sure your wafﬂe maker is heating up.
Combine the ﬂaxseed with the water and leave to thicken up.
Add the oats to your Ninja Kitchen blender and blitz into a ﬂour. Add the oat ﬂour to a mixing bowl along with the buckwheat ﬂour.
Add the coconut oil, banana and coconut sugar to the blender and cream together. Then add the almond milk and blend again.
Pour the liquid mixture into the mixing bowl with the ﬂour and mix well.
Stir in the now thickened ﬂaxseed mixture and vanilla extract.
Grease the plates on the wafﬂe maker with coconut oil to ensure no sticking.
Carefully pour 1/2 the batter into the wafﬂe maker for a large wafﬂe or 1/4 the mixture for a smaller wafﬂe. Make sure the mixture is spread out evenly then close the wafﬂe maker and cook for 4 minutes (wafﬂe maker cooking times do vary, so check instructions for your appliance ﬁrst!).
Once the wafﬂe has cooked, carefully place it onto a plate and cover with foil to keep warm.
Repeat these last few steps until you’ve used up all the wafﬂe batter!
