A simple to make Mexican style soup, the rich flavours really come together to create a delicious warming soup with a spicy kick!

  • 400 g minced beef
  • 2 shallots
  • 1 red chilli
  • 1 clove garlic
  • 1 red pepper
  • 1 green pepper
  • 1 can chopped tomatoes
  • 2 tbsp tomato puree
  • 1 can sweetcorn
  • 1 can kidney beans
  • 2 tbsp oil, for frying
  • 2 tbsp chili olive oil
  • Salt and pepper (you can use cayenne pepper for flavour)
  • For Garnish
  • Grated cheese
  • Tortilla chips
  • Fresh parsley
  • Lime
Prep Time


  1. Turn on your Ninja Foodi and select the sear/sauté option. Add both the oil and the chilli olive oil, finley chopped shallots and garlic. Fry for a couple of minutes

  2. Add the beef and seal for another 5 minutes

  3. Add all the rest ingredients (apart from the garnish) and spice up to your liking. Choose the pressure option and cook for 15-20 min. Once pressure cooking is complete, carefully turn the seal to release the pressure

  4. Serve with tortilla chips, cheese, lime wedges and if you wish add sour cream or yogurt
