I love hiding veggies in the desserts. It adds so many benefits, reduce the calories and such an awesome vegetable like pumpkin or butternut squash actually adds a subtle sweetness. And if you won’t tell that it’s there no one will ever notice.
- 250g dates
- 100g cooked pumpkin
- 100g walnuts
- 50g cacao nibs
- 1 tbsp cinnamon
In the food processor combine dates and pumpkin and process until completely smooth.
Add walnuts, cacao nibs, and cinnamon and continue blending until desired texture is achieved.
I like mine relatively smooth with a little crunch from cacao nibs so I blend for about 3 minutes.
Form the balls with wet hands (if the batter is too sticky you can place it for half an hour in the fridge to firm up a little).
Roll in the toppings of your choice.
