Protein Apple & Cinnamon Crumble Muffins

A delicious twist on the old traditional apple crumble, these muffins are packed with flavour. Free from refined sugars, these muffins are perfect for that guilt-free treat.

Protein Apple & Cinnamon Crumble Muffins

  • For The Crumble
  • 1 1/2 tsp coconut oil
  • 6 apples
  • 3 - 4 tbsp Stevia
  • 1 tbsp ground cinnamon
  • 4 tbsp oats
  • For The Batter
  • 50g natural whey protein
  • 150g self-raising whole-wheat flour
  • 1 tsp baking powder
  • 75g Stevia
  • 1 tsp bicarbonate of soda
  • 1 tsp vanilla extract
  • 160ml milk
  • 100g melted butter
  • 2 large eggs
Prep Time


  1. Begin by pre-heating the oven to 180C degrees.

  2. Prepare the crumble, wash the apples, and chop them into small squares (remove the seeds).

  3. Melt the coconut oil in a small saucepan at medium-low, add the chopped apples, stevia and cinnamon and allow the apples to caramelise.

  4. Once the apples have caramelise (5-10 minutes), turn off the heat and pour in the oats and mix with the apples.

  5. Using the bowl of your Ninja Kitchen System with the dough blade; prepare the cake batter by pouring the dry ingredients, pulse a few times to mix the dry ingredients together.

  6. Pour the vanilla extract, milk, melted butter and eggs and pulse a few times to allow the ingredients to combine together and form the batter.

  7. Distribute the cake batter into greased muffin tins; share the apple crumble mixture between the muffins.

  8. Place the muffins in the oven and cook for 15-17 minutes.

  9. Remove the muffins from the oven and allow them to cool before removing from the muffin tins.
