Who would have thought pears and dark chocolate was the perfect combination? This sweet treat is a must have for a film night with the family. Enjoy!
Pear, Dark Chocolate & Mocha Blondies
- 100g coconut oil
- 3 teaspoons instant coffee + 6 teaspoons boiling water
- 150g flour of choice
- 50g ground almonds
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 150g coconut or date sugar
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 2 pears, cored and diced
- 75g dark chocolate, chopped
Preheat the oven to 180C and grease and line a 9x9in baking tin.
Melt the coconut oil and set aside to cool a little. Meanwhile stir the coffee with boiling water in a small bowl to dissolve and leave to cool.
Place all the ingredients other than the pear and chocolate into your Ninja Kitchen Nutri Ninja and blend until a batter has formed.
Fold in the diced pear and chocolate then spoon into your prepared tin and smooth out evenly. Bake for 25-30 minutes until firm and a skewer comes out clean (you still want the blondies a little squishy).
Leave to cool in the tin then cut into 9-12 pieces. Enjoy!
