Who would have thought pears and dark chocolate was the perfect combination? This sweet treat is a must have for a film night with the family. Enjoy!

Pear, Dark Chocolate & Mocha Blondies

  • 100g coconut oil
  • 3 teaspoons instant coffee + 6 teaspoons boiling water
  • 150g flour of choice
  • 50g ground almonds
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 150g coconut or date sugar
  • 2 eggs, beaten 
  • 1 teaspoon vanilla extract
  • 2 pears, cored and diced
  • 75g dark chocolate, chopped
Prep Time


  1. Preheat the oven to 180C and grease and line a 9x9in baking tin.

  2. Melt the coconut oil and set aside to cool a little. Meanwhile stir the coffee with boiling water in a small bowl to dissolve and leave to cool.

  3. Place all the ingredients other than the pear and chocolate into your Ninja Kitchen Nutri Ninja and blend until a batter has formed.

  4. Fold in the diced pear and chocolate then spoon into your prepared tin and smooth out evenly. Bake for 25-30 minutes until firm and a skewer comes out clean (you still want the blondies a little squishy).

  5. Leave to cool in the tin then cut into 9-12 pieces. Enjoy!
