Peach and Blueberry Crumble

One of my favourite ways to use up fruit is to put it into a delicious crumble. This crumble is delicious and guilt-free because it is Gluten and Refined Sugar-free.

Peach and Blueberry Crumble

  • Filling
  • 4 peaches sliced
  • 100g blueberries
  • 3 tbsp coconut sugar (or any other sugar)
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1 tbsp corn flour
  • 1 tsp vanilla extract
  • Crumble
  • 100g oats (gluten-free)
  • 55g plain flour (gluten-free)
  • 1 tsp baking powder
  • 100g coconut sugar (or any other sugar)
  • Pinch salt
  • 1/2 tsp cinnamon powder
  • 1 tsp ground ginger
  • 115g butter
  • 1 egg
Prep Time


  1. Preheat oven to 180 C/Gas Mark 4.

  2. Grease a cast iron pan or baking dish with butter or coconut oil.

  3. Combine all the ingredients for the filling in a bowl and mix using your hands. Then add to the greased pan/dish.

  4. Add half the oats to a blender and pulse 4 times or until the oats are partially blended.

  5. Add them to a large bowl with the remaining oats, flour, baking powder, coconut sugar, salt and spices.

  6. Rub the butter into the flour using your finger tips. Mix in the egg using a fork.

  7. Add the crumble topping to the fruit in the pan/dish and bake for 25 – 30 minutes.

  8. Serve with custard or cream!
