Pasta Bake with Homemade Neapolitan Sauce

  • For the sauce
  • 5 large tomatoes, skin removed
  • 1 onion, chopped
  • 3 garlic cloves
  • 2 tbsp tomato puree
  • 3 tbsp olive oil
  • 1 tsp brown sugar
  • 1/3 cup chopped basil
  • 2 tbsp chopped oregano or dry oregano
  • 1/2 cup of water
  • Salt and pepper
  • Additional ingredients
  • 300g dry Penne pasta
  • 100g grated mozzarella cheese
  • Chicken (optional - your choice)
  • Basil to garnish
Prep Time


  1. Set your Ninja Foodi to sear/sauté and add the oil, whole garlic cloves and onions. Sear for couple of minutes, stirring throughout

  2. Add the rest of the ingredients for the sauce, and stir to combine

  3. Assemble the pressure lid and set to pressure cook on high for 15 min

  4. While this is pressure cooking, cook penne pasta al dente

  5. Once the pressure cooking is finished, carefully move the pressure release valve to quick release the pressure. Leave to cool, then transfer everything to a blender and blend for 30 seconds to get the correct consistency

  6. Mix the cooked pasta with 500ml of the sauce, along with the chicken if you’re using this

  7. Transfer to a heatproof baking dish and top with cheese

  8. Bake in a preheated oven at 190 degrees for 20 min

  9. Serve while hot and topped with fresh basil
