One Pan Chicken and Cauliflower

The perfect mid week high protein meal that is easy to make and very flavourful. The best bit is that it is all made in one pan so less washing up! It also happens to be Gluten free and low in Carbohydrates.

One Pan Chicken and Cauliflower

  • For the Chicken
  • 1.5lb Chicken Breast cut into thin slices
  • 3 Cloves Garlic crushed
  • 1/2 tsp Dried Oregano
  • 1/2 tsp dried Thyme
  • 1/2 tsp Onion Powder
  • 1 tsp Chilli Flakes
  • 3 tbsp Parmesan, finely grated
  • 1 tbsp Butter
  • Pinch Salt and Pepper
  • 1 tbsp Oil
  • For the Cauliflower
  • 1 tbsp Butter
  • 1 small cauliflower head, florets only
  • 1 small Onion diced
  • 2 garlic cloves crushed
  • Juice of 1 lemon
  • 1/2 tsp Paprika
Prep Time


  1. In a large plate, combine combine the garlic,oregano, thyme, onion powder, chilli flakes, parmesan and salt and pepper.

  2. Coat the chicken in the mixture, ensuring it is covered all over. In a large pan over medium/high heat, add the oil and butter.

  3. Cook the chicken for 3 – 4 minutes on each side and set aside.

  4. Add the florets from the cauliflower to the Nutri Ninja blender and blend until it resembles grains the size of rice. You may need to work in batches depending on the size of the cauliflower.


  5. In the same pan that you cooked the chicken, melt the butter. Then add the Onion and Garlic. Cook for 4-5 minutes until the onions are golden, then add the cauliflower.

  6. Cook for a further minute before adding the lemon, paprika and a splash of water. Return the chicken to the pan and reheat for a minute.

  7. Serve and enjoy!
