My kids love these cosy oaty Pumpkin Muffins, they are wholesome, free of refined sugar and so delicious.
Oat Pumpkin Muffins
- 180g Oats
- 1 tsp Baking Powder
- 1/2 tsp Bicarbonate of Soda
- 1 tsp Ground Cinnamon
- 1 tsp Ground Ginger
- 1/4 tsp Ground Cloves
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 30g Maple Syrup
- 225g Pumpkin Puree
- 1 Egg
- 250ml Milk
- 30g Pecans finely chopped (Optional)
Preheat oven to Gas Mark 4, 177 C.
Add the oats to the blender and blend for 1 minute until the oats are slightly broken down.
Empty into a large bowl and add the remaining ingredients. Mix well using a wooden spoon
Transfer mixture to a greased muffin tin.
Bake for 20 – 25 minutes and allow to cool before removing from the tin.
