Oat Pumpkin Muffins

My kids love these cosy oaty Pumpkin Muffins, they are wholesome, free of refined sugar and so delicious. 

Oat Pumpkin Muffins

  • 180g Oats
  • 1 tsp Baking Powder
  • 1/2 tsp Bicarbonate of Soda
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 1/4 tsp Ground Cloves
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 30g Maple Syrup
  • 225g Pumpkin Puree
  • 1 Egg
  • 250ml Milk
  • 30g Pecans finely chopped (Optional)
Prep Time


  1. Preheat oven to Gas Mark 4, 177 C.

  2. Add the oats to the blender and blend for 1 minute until the oats are slightly broken down.

  3. Empty into a large bowl and add the remaining ingredients. Mix well using a wooden spoon

  4. Transfer mixture to a greased muffin tin.

  5. Bake for 20 – 25 minutes and allow to cool before removing from the tin.
