Oat, Date and Almond Butter Bars

Lately, my energy has been a little low, so I have started to add dates to all of my snacks for a quick boost of energy. These Oat, Date and Almond Butter Bars do just that and have a gooey, caramel like center.


Oat, Date and Almond Butter Bars

  • Crumb
  • 190g oats
  • 1 tbsp sesame seeds
  • 100g mollasses (unrefined sugar)
  • 1/4 tsp salt
  • 100g almond butter
  • 75g coconut oil
  • Filling
  • 20g dates
  • 1 tbsp water
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
Prep Time


  1. Preheat oven to Gas Mark 4, 180 degrees C.

  2. In a large pan over medium/low heat toast the oats and sesame seeds for 5 minutes

  3. Add the remaining ingredients for the crumb into the blender

  4. Blend on high for 2 – 3 minutes then press half the mixture into a lined loaf tin with the grease proof paper coming over the edges to make it easier to lift out.

  5. Add the dates, water, vanilla, ground ginger and ground cinnamon to the blender and blend until it comes together.

  6. Using a spoon, add the date mixture to the tin and spread evenly.

  7. Top with the remaining crumb and bake for 30 – 35 minutes.

  8. Cool completely, then lift the paper out of the tray and cut into 16 bars
