Oat and Coconut Biscuits

These are one of my favourite biscuits. They are crisp, buttery, coconut-y and so more-ish. I always make a large batch but they never last long!

  • 135g rolled oats
  • 170g plain flour - sieved
  • 130g desiccated coconut
  • 300g light brown sugar
  • 185g butter
  • 3 tbsp maple syrup
  • 3 tbsp water
  • 1/4 tsp cinnamon powder
  • 3/4 tsp bicarbonate of soda
Prep Time


  1. Preheat oven to Gas Mark 4, 160 degrees C

  2. Line 2 large trays with baking paper

  3. Add the rolled oats to the blender and blend very quickly until the oats have broken slightly but not completely

  4. Add the oats to a bowl with the plain flour, coconut and light brown sugar and stir through

  5. Add the butter, maple syrup, water and cinnamon to a pan and stir until just melted

  6. Remove from the heat and stir in the bicarbonate of soda

  7. Pour the butter mixture into the dry ingredients and mix through thoroughly

  8. Use your hands to form small balls of the mixture, add to the pre lined trays and press down slightly using the palm of your hand

  9. Bake in the pre heated oven for 18 minutes

  10. Remove from the oven, allow to cool slightly and enjoy!
