No Bake Gingerbread Brownies With Salted Caramel Drizzle

This is definitely the time of year to really enjoy all of the delicious foods and sweet treats! These brownies are soft, fudgey and packed with chocolatey goodness! They’re also super quick and easy to make in the Ninja Food processor and don’t even require any baking!

No Bake Gingerbread Brownies With Salted Caramel Drizzle

  • For Brownies
  • 1/2 cup cashews
  • 1/2 cup oats
  • 1 cup pitted dates
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Pinch pink Himalayan salt
  • 2 tbsp peanut butter
  • For Caramel Drizzle
  • 2 tbsp smooth peanut butter
  • Almond milk
  • 1 tbsp agave nectar
  • Pink Himalayan salt
Prep Time


  1. In your food processor combine the cashews and oats and blitz to form a rough flour.

  2. Add in the peanut butter, cacao powder, spices and dates and blend again until everything is well combined.

  3. Transfer this into a baking dish and firmly press down.

  4. Pop these into the freezer for 2 hours+.

  5. To make the sauce, mix together the peanut butter, agave nectar, a good pinch of salt and a dash of almond milk and mix well. Gradually add in more milk and continue to mix until you’re left with a smooth, creamy consistency.

  6. Once the brownies are set, slice into squares and drizzle over the sauce.
