Tip: Experiment with different types of hard cheese for some variety
- 270g plain flour
- 6g baking powder
- ½ tsp salt
- 1 tbsp chives – finely chopped
- 40g mature cheddar – grated
- 1 egg
- 100g butter – softened
- 60g crème fraiche
- 1 egg & 1 tbsp milk for brushing
In a large bowl, add flour, baking powder, salt, chives and cheddar. Mix well and then add egg, softened butter and crème fraiche. Combine as well as you can, then place on a clean surface and knead only until all loose flour has been worked into the dough. You don’t want to overwork the dough because scones should be flaky and buttery.
Use cooking pot without grill plate or crisper basket installed. Close the lid. Select BAKE, set temperature to 170°C and set time to 17 minutes. Press START/STOP to begin preheating.
While unit is preheating, roll out the dough approximately 3cm thick. Using a biscuit cutter cut out scones, rework left over dough and cut again.
In a small bowl add egg and milk and combine well. Brush top of scones with egg mix.
Once unit beeps to signify it has preheated, lightly spray the pot with cooking spray and add scones. Close hood to begin cooking.
When cooking is complete, remove the scones and allow to cool down. Serve with butter, chutney or as a side to soups and stews.
