Lime and Vanilla Infused Watermelon Pops

Dipped in a crisp chocolate shell, topped with pistachios these fun and zesty Lime and Vanilla Infused Watermelon Pops make the perfect summer treat!

Lime and Vanilla Infused Watermelon Pops

  • Small seedless watermelon (cut into triangles)
  • 6-8 lolly sticks cut in half
  • Juice of 2 limes
  • 2 tbsp agave syrup
  • 2 tsp vanilla extract
  • Pinch sea salt
  • 100g high quality dark chocolate (at least 85% cocoa solids)
  • 1/2 cup shelled pistachios
Prep Time


  1. Start by cutting a slit into the base of each watermelon wedge. Stir together the lime juice, agave, vanilla extract, and sea salt and pour into a shallow tupperware tub/dish. Place the wedges face down in to the tupperware tub, seal/cover, then refrigerate for 30 minutes. Be sure to turn the wedges over half way through.

  2. Line a tray with a silicone mat or piece of non-stick paper. Remove a wedge at a time and let the excess liquid drip then push the lolly stick through the slit in the base of the watermelon. Repeat until all lollies are completed then place the tray into the freezer for 1 hour.

  3. Using your Ninja processor bowl process the pistachios on low for 2-3 seconds until roughly chopped and set to one side. Melt your chocolate over a double boiler then remove the lollies from the freezer, spoon over chocolate and sprinkle over the chopped pistachios. Repeat to all lollies then freeze for a further 10 minutes and enjoy. Store in an airtight container in the freezer for up to 2 weeks.
