Lemon Drizzle Banana Bread

This is perhaps the perfect Spring time dessert/sweet treat and an absolute must bake this season! It’s sweet with a vibrant fruity kick from the lemon and actually really simple to throw together. The recipe is also completely gluten and dairy free

Lemon Drizzle Banana Bread

  • 3 large bananas - ripe
  • 3 whole eggs
  • 30g vanilla whey protein
  • 3 tbsp pure maple syrup
  • 3 tbsp organic coconut oil
  • 140g oat flour
  • Pinch sea salt
  • Dash vanilla extract
  • 1 tsp baking powder
  • Zest from 2 whole lemons
  • Juce from 1 whole lemon
  • 1 tbsp maple syrup
  • 50g vegan white chocolate
Prep Time


  1. Preheat your oven to 180c and line a loaf tin with baking paper

  2. In your Ninja Kitchen food processor, combine the bananas, coconut oil and maple syrup and blend until smooth. Add in the eggs and vanilla extract and blend again

  3. Now, add the dry ingredients and process everything to create a smooth batter

  4. Pour the mixture into your loaf tin and pop into the oven to bake for 35-45 minutes or until cooked through. Remove and allow to cool on a wire rack

  5. Mix together the lemon juice and maple syrup, then prick holes throughout the loaf using a fork and pour the lemon syrup mixture over the loaf. Melt the white chocolate, then pour this over the cooled cake to ice, then add the toppings of your choice!
