  • For the hummus
  • 1 can chickpeas - drained and rinsed
  • Handful baby spinach
  • Heaped tbsp olive oil
  • 1 tbsp light tahini
  • Salt and pepper to taste
  • Water as needed
  • 1 ripe avocado
  • Juice from 1 lime
  • 1-2 cloves garlic
  • Chilli flakes to taste
  • For the wedges
  • 2 large sweet potatoes
  • Olive oil
  • 1 tsp agave syrup
  • Generous pinch fajita seasoning
  • Coriander to garnish
Prep Time

  1. To make the hummus, in your Ninja Kitchen food processor, combine the chickpeas, spinach, olive oil, tahini, garlic, lime juice, salt, pepper, chilli and avocado

  2. Blend until smooth and creamy and add in a drizzle of water as needed to create a velvety, creamy texture

  3. Meanwhile, for the wedges, preheat the oven to 200c. Slice the potatoes into chunks and transfer these onto a baking tray. Drizzle with a little olive oil, the agave and fajita spices, then toss everything together

  4. Pop these into the oven to bake for 30-40 minutes or until soft in the centre and crisp on the outside

  5. Serve the hummus and wedges with a drizzle of olive oil, chilli flakes and a sprinkling of coriander to garnish

Cooking and being in the kitchen was always something that I loved, after always helping and watching my mum cook as a child. Fitness is a huge part of my life, so making sure that I fuel my body with healthy, nourishing foods goes hand in hand with that. I started to create healthy alternatives to my favourite dishes and loved sharing my photos and recipes on social media just as a hobby. After a while I decided to set up my blog, which was my place to really get creative and write and share whatever I wanted.
