Gin, coconut and white chocolate truffle balls

A rich, coconuty boozy truffle that is packed with sweetness from the coconut yet rich in zesty flavours from the lime – a simple yet delicious combination. This is a recipe to definitely enjoy with your friends on a Friday night after a long week at work.

Ingredients

  • 250g desiccated coconut
  • Zest from one lime
  • Juice from 1/2 lime
  • 2 tbsp agave
  • 2-3 tbsp gin
  • 1 tbsp coconut oil
  • 80g white chocolate

Instructions

  1. Using the bowl of your Ninja Kitchen System and the metal blade, begin by adding the desiccated coconut, select low and pulse for several minutes to release the oil from the coconut

  2. Then at the zest and juice of the lime and select low again for about 30 to 60 seconds

  3. Then add the agave, gin and coconut oil and select high, this time for about 60 seconds (pulse for longer if you need to)

  4. Roll the mixture into balls and place in the fridge to set

  5. Melt the white chocolate in a bowl over hot water, and drizzle the truffles with the melted chocolate sprinkle with some lime zest and place back in the fridge to help the white chocolate set
