Gajrela – Carrot Halwa

Gajrela or Carrot Halwa is a comforting popular Indian dessert made with grated carrots that are sautéed in Ghee, Milk and Cardamom. It is topped with Pistachios, Cashews and Raisins and often served with a dollop of vanilla ice cream.

  • 1.5 tbsp ghee
  • 1 tsp cashews
  • 1 tsp golden raisins
  • 1 tsp pistachios
  • 250g carrots, grated
  • 100ml milk
  • 50g caster sugar
  • 15g milk powder
  • 1/4 tsp ground cardamom
Prep Time


  1. Select sear/saute on the Ninja Foodi and set to high. Add the ghee, cashews, pistachios and raisins. Saute for 1 minute, then remove and set aside

  2. Add the grated carrots to the Foodi and saute for 2 minutes before pouring in the milk

  3. Give the carrots a stir, close the pressure lid and set the pressure release valve to seal

  4. Select pressure and set to high. Cook for 4 minutes

  5. When complete, carefully quick release the pressure and remove the lid

  6. Press the saute button and add in the sugar. Saute for 3 minutes, stirring occasionally

  7. Add the milk powder and saute for another 4 minutes until most of the liquid has evaporated

  8. Continue to stir the carrots for 8 – 10 minutes

  9. Finally, stir in the ground cardamom and add the cashews, pistachios and raisins

  10. Serve hot with vanilla ice cream
