Easy Lemon Cake
Tip: When zesting your lemon only use the peel. Avoid zesting the pith as that will give the cake bitter taste.
- 250g plain flour
- 100g sugar
- 4 tsp of vanilla extract
- 1 tbsp baking powder
- 2 eggs
- 100ml oil
- 150g yoghurt
- 1 lemon (zest & juice)
Select BAKE, set temperature to 160°C and time to 25 minutes. Press START/STOP and allow to preheat for 5 minutes.
In a large bowl add sugar, vanilla sugar, lemon juice and zest, oil, yoghurt and eggs. Whisk until well combined.
Add flour and baking powder and mix thoroughly.
Once you have a smooth runny dough use cooking spray to grease the cooking pan.
Once the unit beeps to signify it has preheated, our mixture into the cooking pan and place directly in pot, shut the lid and press START.
When baking is complete, carefully remove the cooking pan and let the cake cool down.
Serve slightly warm with your favourite ice cream, jam or just simply cold as is.
