Easy Blender Banana Muffins

I have been making these banana muffins with the kids for many years but have recently changed some of the ingredients to make them a little healthier. Luckily the kids didn’t notice and loved them anyway!

Easy Blender Banana Muffins

  • 1 egg
  • 1/2 tsp vanilla extract
  • 55g coconut sugar
  • 1 very ripe banana
  • 55ml oil (not a strong flavoured one) - any vegetable or sunflower oil
  • 85g spelt flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
Prep Time


  1. Preheat oven to 180 C/Gas Mark 4

  2. Line a muffin tin with 12 cupcake cases

  3. Add the egg and sugar to the blender and blend to combine

  4. Add the vanilla and banana and blend a little more

  5. Pour in the oil and add the flour, baking powder, bicarbonate of soda, cinnamon and ginger and blend until completely combined

  6. Spoon into cupcake cases. About 2 tbsp per cupcake

  7. Bake for 12 – 14 minutes until baked through

  8. Serve and enjoy!
