Dark Chocolate Rum Truffles

Dark Chocolate Rum Truffles

  • 3 tbsp Red Leg Spiced Rum
  • 300g dark chocolate
  • 9 tbsp full fat coconut milk
  • 2 tbsp cacao powder
Prep Time


  1. Begin by melting the chocolate in the microwave for 3 minutes giving it a stir every 30 seconds

  2. Leave to cool slightly before pouring into your blender

  3. Add to this the coconut milk and rum, and blend for 10 seconds or until combined

  4. Pour the mixture into a bowl and place in the fridge ideally overnight but if not, for a minimum of 3 hours

  5. Scoop out a tablespoon of the firmed mixture at a time and quickly roll it into a ball. If the mixture is sticky dip your hands in a bowl of cold water before rolling

  6. Place the truffles onto a baking tray lined with parchment paper, and place in the freezer to re-firm for around 15 minutes

  7. Add the cacao powder to a bowl and roll each truffle in it

  8. Eat immediately, or store in the freezer. If storing in the freezer, leave to warm up for 10 minutes before serving
