  • 600g celeriac, peeled and cut into cubes
  • 400g sweet potato, peeled and cut into cubes
  • 1 vegetable stock cube
  • 1 small white onion
  • 2 cloves garlic
  • Pinch chilli flakes
  • 1/2 tsp smoked paprika
  • Pinch ground cumin
  • Salt and pepper, to taste
  • 4 - 5 cups water (can add some dairy free milk for extra creaminess)
  • Chickpeas
  • 1/2 can chickpeas, drained and rinsed
  • 1/2 tsp paprika
  • Pinch chilli flakes
  • Salt
  • Olive oil
Prep Time

  1. Preheat your oven to 200c.

  2. Place the celeriac and sweet potato onto a baking tray and drizzle with a little olive oil.

  3. Pop these into the oven to bake for around 40 minutes, until softened.

  4. Meanwhile, finely dice the onion and garlic and add these into a frying pan with a drizzle of olive oil. Sauté these over a medium heat until softened.

  5. Once the veggies are cooked, add everything into your Ninja Kitchen Blender, along with the spices, water and stock cube. Blend until super smooth and creamy. Adjust seasonings to taste.

  6. To make the crispy chickpeas, add a little oil into a hot frying pan and sauté the chickpeas with the spices until crisp.

  7. Pour the blended soup into a pan and warm through.

  8. Serve the soup topped with some fresh herbs and a good handful of the chickpeas.

Cooking and being in the kitchen was always something that I loved, after always helping and watching my mum cook as a child. Fitness is a huge part of my life, so making sure that I fuel my body with healthy, nourishing foods goes hand in hand with that. I started to create healthy alternatives to my favourite dishes and loved sharing my photos and recipes on social media just as a hobby. After a while I decided to set up my blog, which was my place to really get creative and write and share whatever I wanted.
