The pecans give that extra ‘crunch’ that’ll have you wishing you made more!

  • 100g coconut flour
  • 100g vanilla whey protein powder
  • 2 tbsp coconut sugar
  • 2 tbsp melted coconut oil
  • 100ml milk
  • Handful pecans, halved
  • 100g dark chocolate
  • Desiccated coconut for decoration
Prep Time

  1. Place the coconut flour, whey protein and coconut sugar in your NutriNinja and blend until well combined.

  2. Add the melted coconut oil and milk and continue to blend.

  3. Stir in the halved pecans.

  4. Use your hands to scoop up handfuls of the mixture and form log shapes. If the mixture is not sticking together, add slightly more coconut oil.

  5. Once you have created the bars, place onto a baking tray and refrigerate for half an hour or so until hard.

  6. Melt the dark chocolate in a glass dish and drizzle over the coconut bars. Top with desiccated coconut!

  7. Enjoy!

I am currently a student of Biomedical Science, and I hope to pursue a career in sports nutrition after I graduate. Apart from food, my great passion in life is running — something I do competitively. But it was an injury-related break in my running career that got me into the kitchen for the first time. As a sufferer of celiac disease, I've always had to carefully manage my diet, and being out of action gave me the spare time to explore ways to make gluten-free sweet treats that truly deliver on flavour. I soon discovered that food can be healthy whilst looking and tasting fantastic.
