Cinnamon Pancakes with Gingerbread Coffee Drizzle

Pancakes are the ultimate weekend breakfast and even more appropriate for Christmas Day! They’re a great family dish, as you can whip up a huge batch to serve with a variety of all of your favourite toppings. These have a little festive twist with the addition of all of those glorious spices, to leave your home smelling just like Christmas!

Cinnamon Pancakes with Gingerbread Coffee Drizzle

  • For Pancakes
  • 1 small banana
  • 1 whole egg
  • 1 egg white
  • 150ml almond milk
  • 2 tbsp vanilla protein
  • 90g buckwheat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Pinch pink salt
  • 1/2 tsp ground ginger
  • Coconut oil for cooking
  • For The Coffee Drizzle
  • 2 tbsp cashew butter
  • 1 tsp instant coffee
  • Almond milk
  • 1 tbsp agave nectar
  • Pinch ground ginger
Prep Time


  1. To make the batter, combine all of the pancake ingredients in your Ninja blender and blitz until they form a smooth batter.

  2. Heat a little oil in a non-stick frying pan over a medium-high heat. Pour some of the pancake batter into the pan and cook until bubbles start to appear on the surface, then flip and cook on the other side. Repeat this for the remaining mixture.

  3. Whilst these are cooking, mix together the cashew butter, ginger, agave and coffee until smooth. Then gradually drizzle in the almond milk and mix until you’re left with a nice pourable consistency.

  4. Serve the pancakes with a generous helping of the sauce and toppings of choice.
