Chocolate, Kiwi & Coconut Pancakes

Here’s something delicious, chocolatey, indulgent AND still pretty healthy to start off your morning.. Chocolate, Kiwi and coconut pancakes! We might not always have the sunniest weather in the UK, however you can imagine you’re on a tropical beach sitting by the sea, whilst digging into these pancakes.

Chocolate, Kiwi & Coconut Pancakes

The flavours of coconut and kiwi are a really refreshing and Summery combination, which contrasts really nicely against the rich notes of cacao powder. These are also gluten free and also don’t use any eggs either- you could make the recipe completely vegan by substituting the honey for brown rice or maple syrup.



  • For The Pancakes
  • 1 tbsp ground flaxseed mixed with 2 tbsp water
  • 160ml almond milk
  • 1 heaped tsp almond butter
  • 1 ripe banana
  • 1 tsp honey
  • 1 tbsp cacao powder
  • 145g buckwheat/brown rice flour
  • 1/2 tsp baking powder
  • Pinch salt
  • Coconut oil for cooking
  • For The Sauce
  • 2 tbsp honey
  • 1 tbsp cacao powder
  • 1 tbsp smooth cashew butter
  • almond milk
  • For The Topping
  • 1 fresh kiwi
  • Coconut chips
Prep Time


  1. Combine the ground flaxseed with the water and leave this to set for a few minutes to allow it to thicken and create a gelatinous texture.

  2. Place all of the pancake ingredients into your Ninja Kitchen blender cup and blitz this until it forms a smooth batter.

  3. Take a tsp of coconut oil and heat this in a large frying pan, on a medium heat.

  4. When the pan is nice and hot, pour small pools of the mixture into the pan.

  5. Allow these to cook and once they begin to bubble on the surface, flip and cook on the alternate side. Repeat this for the remaining mixture.

  6. To make the sauce, mix the cashew butter, cacao and honey together in a small bowl. Gradually add in splashes of almond milk until you’re left with a smooth, runny consistency.

  7. Serve the pancakes with fresh fruit, coconut chips and drizzle in the chocolate sauce.
