This Chocolate Chip Chickpea Cookie Dough is a cruelty-free and nutritious alternative to the original. Packed with protein and healthy fats.
Chocolate Chip Chickpea Cookie Dough
- 1 x 400g chickpeas (preferably organic)
- 1 tbsp vanilla extract
- 65g cup nut butter (cashew or almond work best)
- 45g cup coconut sugar
- 2 tbsp milled chia or flax seed
- 2 tbsp dairy-free milk
- 1 tbsp coconut flour
- 1/4 tsp sea salt
- 1/4 tsp bicarbonate of soda
- 75g-100g dairy-free chocolate chips
Start by rinsing the chickpeas in hot water and draining away any excess water
Place all of the ingredients except for the chocolate chips into the bowl of the Ninja food processor and secure the lid. Run the LOW programme, scrape down the sides, then repeat using the PUREE programme until the mixture comes together into a smooth dough. You may have to do this a few times
Place the dough into a small mixing bowl, cover with cling film and chill in the refrigerator for 30 minutes until completely cool
Stir in the chocolate chips and serve!
Store in an airtight container in the refrigerator for up to 3 days.
To speed up the chilling process you can place your dough into the freezer until firm.
