Chocolate Banana Brownies with Stem Ginger

These Gluten Free Fudgy Banana Brownies with Stem Ginger are incredibly moist and flavourful. They are a satisfying treat for breakfast, dessert and as a snack.

Chocolate Banana Brownies with Stem Ginger

  • 1 small ripe banana
  • 65g peanut butter
  • 200g coconut sugar
  • 3 eggs
  • 95g cacao powder
  • 1 piece stem ginger, grated
  • 1 tsp vanilla extract
  • 1/2 tsp bicarbonate of soda
  • 100g dark chocolate, chopped
Prep Time


  1. Preheat oven to 180 degrees C/Gas Mark 4.

  2. Line a brownie tin with greaseproof paper.

  3. Blend the banana, peanut butter, sugar, eggs and cacao and pour into a large bowl.

  4. Add the stem ginger, vanilla, bicarbonate of soda and dark chocolate chips and fold together.

  5. Pour into the tin and bake for 15 – 20 minutes.

  6. Remove from the oven and allow to cool for 20 minutes before transferring to a wire rack.

  7. Allow to cool completely before cutting into pieces.
