These Gluten Free Fudgy Banana Brownies with Stem Ginger are incredibly moist and flavourful. They are a satisfying treat for breakfast, dessert and as a snack.
Chocolate Banana Brownies with Stem Ginger
- 1 small ripe banana
- 65g peanut butter
- 200g coconut sugar
- 3 eggs
- 95g cacao powder
- 1 piece stem ginger, grated
- 1 tsp vanilla extract
- 1/2 tsp bicarbonate of soda
- 100g dark chocolate, chopped
Preheat oven to 180 degrees C/Gas Mark 4.
Line a brownie tin with greaseproof paper.
Blend the banana, peanut butter, sugar, eggs and cacao and pour into a large bowl.
Add the stem ginger, vanilla, bicarbonate of soda and dark chocolate chips and fold together.
Pour into the tin and bake for 15 – 20 minutes.
Remove from the oven and allow to cool for 20 minutes before transferring to a wire rack.
Allow to cool completely before cutting into pieces.
