Chewy Date, Coconut & Cacao Nib Cookies

If you’re looking for the ultimate chewy but crunchy vegan and gluten-free cookie, this is the recipe you NEED in your life. With added dates, cacao nibs and the secret weapon ingredients – The Coconut Company coconut sugar and coconut nectar to give them a caramel-like flavour – these are the perfect energy-boosting snack when hunger or your sweet tooth calls!

Chewy Date, Coconut & Cacao Nib Cookies

  • 150g rolled oats
  • 75g desiccated coconut
  • 50g The Coconut Company coconut sugar
  • 1/2 tsp baking powder
  • 4 tbsp coconut oil, melted
  • 4 tbsp The Coconut Company coconut nectar
  • 75g chopped dates
  • 6 tbsp cacao nibs
Prep Time


  1. Preheat the oven to 170 degrees C and grease and line a large baking sheet.

  2. Place the oats, coconut, coconut sugar, baking powder, melted coconut oil and coconut nectar in your Ninja Kitchen Nutri Ninja and pulse a few times so the mixture comes together to form a slightly sticky mixture.

  3. Stir in the dates and cacao nibs then divide into about 12-15, roll into balls and flatten with your hands on the baking sheet, making sure they are spread out.

  4. Bake for 12-15 minutes until golden and expanded. They will still be soft but will firm up while they cool down. Leave on the sheet until completely cooled – they will be awesomely soft but crunchy on the outside, yum!
