Ingredients

  • For the fruit base
  • 650g plum, stone removed and halved
  • 4 tbsp light brown sugar
  • 1/2 tsp cinnamon powder
  • 1/2 tsp ginger powder
  • 1/4 tsp cardamom powder
  • 1/8 tsp ground cloves
  • Pinch of black pepper
  • For the crumble
  • 150g spelt flour or plain flour
  • 95g oats
  • 30g flaked almonds
  • 120g butter
  • 50g demerara sugar
  • 25g caster sugar
  • 1/2 tsp ginger powder
  • 1/2 tsp cinnamon powder
  • 1/4 tsp cardamom powder
  • 1/4 tsp ground cloves

Instructions

  1. Preheat oven to 200 C/Gas Mark 6

  2. Combine the ingredients for the fruit base in a small bowl and mix through with your hands

  3. Add all the ingredients for the crumble in a food processor and pulse until the mixture begins to clump together

  4. Add the plums to the bottom of a baking dish

  5. Scatter the crumble over the plums and bake for 35 – 40 minutes until golden brown
