Butternut Squash Soup

A delicious thick, rich soup with lots of flavour. Homemade soups are super nutritional and very simple to make. A perfect and delicious soup that you can enjoy in the colder months

Ingredients

  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 1 clove garlic (crushed)
  • 1 medium carrot (chopped)
  • 1 large sweet potato (peeled and chopped)
  • 1 butternut squash - peeled, seeded and cubed (approx. 800g)
  • 750ml – 1L vegetable stock
  • Salt and pepper (to taste)

Instructions

  1. Using a large cooking pot at medium heat, add the olive oil, along with the onion and crushed garlic – fry until lightly brown

  2. Add the chopped carrots, chopped sweet potato, butternut squash, vegetable stock and salt and pepper. Reduce the heat to low, cover the pot and simmer for approximately 30-35 minutes or until all the vegetables are tender

  3. Leave to cool

  4. Using the jug of your Ninja Kitchen System, blend the soup until smooth

  5. When ready to serve, reheat and enjoy
