Ingredients

  • 180g oat flour
  • 70g coconut oil
  • 170g honey
  • 2 large bananas
  • 75g oats
  • 1 tsp baking powder
  • Pinch salt
  • Handful frozen blueberries
  • Dash vanilla extract

Instructions

  1. Preheat your oven to 180c and line a loaf tin with parchment paper

  2. In your Ninja food processor, blend together the coconut oil, honey and bananas

  3. Crack in the eggs and blend again

  4. Add in the dry ingredients and blend the mixture a final time to create a smooth batter

  5. Carefully fold through the blueberries, then pour your mixture into the loaf tin and bake in the oven for 1 hour. Cover the loaf for the final 15 minutes to prevent the top burning

  6. Allow the loaf to cool before carefully removing from the tin and serving
