  • 100g dates
  • 100g oats
  • 50g walnuts or almonds
  • 2 - 3 tbsp cacao powder
  • 2 tbsp nut butter
  • For The Filling
  • 1 x 349g pack silken tofu
  • 4 tbsp maple syrup
  • 2 tbsp beetroot powder
  • 1 tsp vanilla extract
  • Freeze-dried raspberries and raspberry powder
Prep Time

  1. First make the tartlet cases: Place the ingredients into your Ninja Kitchen Nutri Ninja blender and whizz up until broken down and the mixture comes together.

  2. Divide into 4-6 pieces and press between individual loose-bottom tart tins, using your finger tips to spread them out evenly across the bases and up the sides. Chill in the fridge.

  3. Next place the filling ingredients into a blender and whizz up until thick and smooth. Chill in the fridge for at least 1 hour.

  4. When ready to serve, pop the tartlets out the tins then spoon some of the beetroot filling into each. Decorate with raspberries and serve.

My love of healthy food was originally inspired by my commitment to fitness and wellbeing. But that's not to say I don't like a treat from time to time. It was when I started looking for healthy treats that still satisfied my sweet tooth that I realised how little there was to choose from. Despite being labelled 'healthy', many of the recipes I came across relied heavily on processed sugar and fat - which is why I decided to take matters into my own hands.
