A extraordinary burger like no other. This beetroot burger is a super healthy take on a traditional meal. Swap your meat for vegetables and enjoy!
- 2 cups of cooked quinoa
- 1/2 cup of flour
- 4 tbsp of breadcrumbs
- 1 potato
- 1 shallot
- 2 garlic cloves
- 1 egg
- 2 tbsp cooking oil
- 1/2 tsp Harrisa spice mix
- Salt and pepper
- Vegetable oil for frying
- Sesame seeds for coating, optional
- Extra for serving
- 1 large tomato sliced
- 1 cup of rocket
- Radish sprouts
- Radish, sliced
Chop the potato, onion and garlic. Cover with a mix of oil, harrisa, salt and pepper and bake in 180 degrees for 20min.
In a food processor add the cooked grains, baked vegetables, egg, flour and breadcrumbs. Pulse until combined.
Set aside to rest for a couple of minutes. If your mix is to wet, add more flour or breadcrumbs. Heat the pan with some frying oil.
Form 4 burger patties from the mix, coat them in sesame seeds if you like or some more breadcrumbs.
Fry the patties for 4 min on each side on medium heat, or until golden brown.
Serve on grilled burger bun, with your favourite toppings.
