Beetroot and Horseradish Soup

  • 2 tbsp coconut oil
  • 1 red onion (roughly chopped)
  • 1 piece root ginger (peeled, roughly chopped)
  • 1 clove garlic (peeled)
  • 350g beetroot (peeled, cut into 1" chunks)
  • 1 green apple (peeled, cored, quartered)
  • 750ml hot vegan vegetable stock
  • 1 tsp dried thyme
  • 1-2 tsp grated fresh horseradish or 1-2 tbsp creamed horseradish
  • 1/4 cup coconut yogurt
  • Sea salt and freshly ground pepper (to season)
Prep Time


  1. Place oil, onion, ginger, and garlic into jug, secure lid on jug and select CHOP

  2. Select SAUTE and let the programme run

  3. Add beetroot, apple, vegetable stock, and thyme into the jug, secure lid on jug and select SMOOTH SOUP

  4. When SMOOTH SOUP setting is finished, add the coconut yogurt and horseradish to the jug and pulse briefly to mix. Add salt and pepper to taste and serve
