Banana and Blueberry Protein Blondies

A simple, delicious gluten-free and refined sugar free recipe, that is packed with jucey blueberries and sweet ripe bananas. These blondies are a fantastic snack to have if you are looking to increase your protein intake. Can be a stable in any lunchbox.

Banana and Blueberry Protein Blondies

  • 150g ground almonds
  • 75g gluten-free flour
  • 1/4 tsp pink Himalayan salt
  • 45g vanilla protein powder
  • 80g stevia
  • 2 small bananas (approximately 135g)
  • 1 large egg (room temperature) if vegan replace with chia egg
  • 125ml almond milk
  • 100g fresh blueberries
  • 25g almond flakes
Prep Time


  1. Begin by preheating the oven to 180C degrees.

  2. Using the bowl of your Ninja Kitchen System and the plastic blade pour in all of the dry ingredients, pulse to thoroughly combine the dry ingredients together

  3. Mush the banana until it turns into a puree, add the banana puree to the dry ingredients along with the whole egg and almond milk – select low and mix until the ingredients combine together

  4. Pour the blondies mixture into a baking tray lined with grease proof paper, throw the blueberries over the mixture along with the almond flakes

  5. Place in the oven and bake for approximately 18-20 minutes

  6. Remove from the oven and allow the blondies to cool before slicing
