Almond Butter Blondies

I think these are the most often made treat in my house. These Fudgy Almond Blondies are vegan and gluten free. They are my kids favourite recipe to make and eat.

  • 80g smooth almond butter
  • 85g oat milk (or any other milk)
  • 65g coconut sugar
  • 90g gluten free oats
  • 1/4 tsp bicarbonate of soda
  • Pinch of salt
  • 40g (vegan) dark chocolate roughly chopped
  • 20g finely chopped nuts of choice (I used pecans)
Prep Time


  1. Preheat oven to 180 C/Gas Mark 4

  2. Grease a loaf tin with coconut oil

  3. Add the almond butter, milk, coconut sugar, oats, bicarbonate of soda and salt to a blender and blend till combined

  4. Spoon the batter into a large bowl and mix through the chocolate chips and nuts

  5. Bake for 25 minutes and leave to cool for 15 minutes before enjoying
